HMN ... I am in the somewhat enviable position I suppose of being able to go out to the Rancher and select a lamb on the hoof if I want.  Since I worked sheep ranches as a kid, though, I never quite got the hang of lamb.  I make it for the housemate because he adores it ... but me ... not so much
