It reminds me of a conversation I had with someone in camp this year. "I
really don't like meat with fruit... it's really not that prominent in
modern American cuisine." My reply "What about Turkey & Cranberry Sauce?"
*Light Bulb Moment* "Oh... I never looked at it that way".

Some of the medieval inspired dishes I served over the two weeks of Pennsic
were:
Scrambled Eggs & Cheese (There was a nice Italian blend of shredded cheese
at the store)
French Toast (with Orange Marmalade made into a quick Syrup)
Sour Orange Chicken
Chicken with Fennel
Beef y-Stewed (With Fennel)
Asparagus with Onions
Stove Top Stuffing (Store Brand)
Chickpeas & Bacon
Two variants on a stewed Pork Butt
Mountain Mushrooms
Salad (Platina inspired)

The Asparagus, Mushrooms & Chickpeas were propably the biggest hits. Many
of the dishes were repeated on the second week. There were two nights that
a Spaghetti Feed was done as well as two nights for Chili Dogs. I was
strongly urged to not make all the meals inspired by medieval recipes.

I was also dealing with a number of food allergies, so my use of certain
ingredients were limited. Since this was not a feast where people with
allergies could make more choices, I worked around the allergies with far
more deligence. My typical dinner include some sort of meat, some sort of
carb and some sort of vegetable. For a couple of the meat dishes I set out
a portion for one particular person and then added the other ingredients to
the main batch that this individual was allergic to.

I was very delighted to receive some very nice thank you gifts from the
people who were on the meal plan. This included a copy of "Oertha Cooks"
which was published by the subjects of Oertha as a Fundraiser. I'm looking
forward to trying some of the recipes in that collection.
