Since this one could be prepared ahead of time, it would reduce the
load on the event staff. However, I didn't suggest this because i
thought it would be too far out of the non-SCA people experiences at
the demo to go over well.

Again, I thought this would be too unusual for the non-SCA folks.
It's not what I think of when I think of 'salad'. But then most cold
potato and macaroni salads and such have never appealed to me.
We still haven't heard from the original poster if they had a time
period, particular culture or a season in mind.
What does "OP" mean in this case? Out of Period doesn't seem to apply.
