Constanza Marina de Huelva asked:

tip for a
novice like me that *may* want to be a head cook *someday*. >>>

For previous discussions on cooking rice in large quantities, either
in the oven or other ways, see this file in the FEASTS section of the
Florilegium;
cookng-grains-msg (34K) 4/24/08 Cooking grains in quantity.

While you are there you might want to glance at some of the other
files. Many of these gives suggestions for planning and cooking
feasts from some of the best cooks in the Known World, often learned
the hard way. A few are:
cutting-onions-msg (8K) 1/ 4/04 Techniques for cutting onions.
Fst-Managemnt-art (12K) 7/22/01 "Feast Management" by Lady Eden
Blacksmith.
headcooks-msg (155K) 5/17/01 Advice for SCA headcooks.
Planning feasts.
(I do have a lot of updates for this file, but I'm also thinking
of splitting it)
kitchen-knives-msg (36K) 4/21/08 Kitchen knives for the modern
kitchen and
                                         feast preparation, Knife care.
kitchn-gloves-msg (6K) 6/28/07 Comments on using gloves in the
kitchen.
kitchn-safety-msg (14K) 12/ 6/06 Kitchen safety for SCA feasts.

Constanza, I've never cooked a regular feast, nor am I likely to.
However, I did serve a successful lunch to the Crowns and their
entourage. So, you might consider doing something like that. Or for
now, concentrate on cooking period dishes for pot lucks and such.
