[Sca-cooks] OOP: Recipe wanted Chewy Molasses Cookies

Here's the recipe I used this season. from The Village Baker's Wife by Gayle and Joe Ortiz

Ginger Molasses Cookies

3/4 c butter
1 1/4 c sugar
1/4 c molasses
1 large egg
2 tsp baking soda
2 c flour
1/2 tsp ground cloves
1/2 tsp ground ginger
1 tsp ground cinnamon
1/2 tsp salt

Preheat oven to 375F.  Lightly butter baking sheets or line with parchment paper/silpats.

Melt butter and pour into large mixing bowl.  Let it cool, then add 1 c sugar, molasses and the egg and beat well.

Sift together the baking soda, flour, spices and salt.  Add to the butter mixture and mix well. Cover the bowl and place in the fridge for a 15 miute chill.  (or shape into logs, wrap and chill overnight)

Place remaining 1/4 c sugar on a plate.  Scoop the dough by the tablespoonful, roll into balls and coat with the sugar.  Arrange 2 inches apart on the baking sheets.  Bake on center rack.  8 minutes for chewy, 10 minutes for crispy.  (if you used the overnight log method, slice into 1/4 inch to 1/2 inch pieces.  They'll take a bit longer to bake due to the colder starting temp.)

I didn't bother with the roll in sugar part.  Recipe yields about 4 dozen.
