I think it is preferable to use the full modern name, and would prefer that
myself.  It is a pretty easy matter to write to the person in question
privately and ask their permission and preferred name to be used.

For a citation, in my case, I would recommend using my actual name which is 
what I use for most of my culinary writing.  Bear is a nickname I've used 
casually for forty odd years and is not the name I use in the SCA.
