[Sca-cooks] Cranberry substitute

Well, based on our pre-Thanksgiving discussions, Lingonberries? Any chance
you've got IKEA or some other Swedish/Danish import store down there?

Am I understanding you correctly, you can't seem to find any cranberry sauce
for purchase in Chile? Here in the states, you find it in two basic forms,
jellied cranberries that come in a can, and whole cranberry sauce, which can
also come in a can or a jar, or is made at home. If you look back through
the discussions of the last several weeks, you'll find oodles of recipes for
making it yourself. Those are good for either fresh or frozen cranberries.
Have you tried the frozen fruit section of your store?

Barring finding any actual cranberries, then you are faced with a
substitution. Blueberry jam wouldn't make a good substitution in my
opinion, because it is very sweet. As we were discussing earlier,
cranberries have a bitter, tart, sometimes astringent flavor profile. Most
cranberry relishes are made with sugar or an equivalent to mellow and
counter the bitter tart flavors. Other tart flavors like orange and lemon
(and I even used a pink grapefruit I had in the fridge) are often used.
So if you end up with apples, you might cook them down with some thin slices
of orange with the peel on, or some candied orange or lemon peel, along with
some juice and maybe even the pulpy part of the fruit cooked in as well.
Orange or other citrus fruit marmalades might be an off-the-shelf option.

I think the tartness of the cranberries work well with the bland taste of
the turkey meat, especially the white meat.
Hope that helps!
Christianna

Subject: [Sca-cooks] Cranberry substitute

Husband Peter decided to promote a relative and organized a dinner party
having her prepare the food.
She fell threw so now I am the cook of a Thanksgiving turkey cause I
know how to do it but the hitch is cranberry sauce or jelly/jam. It
seems like Chile is a leading producer but no on sale here. The nearest
is blueberry jam. Peter says I should puree apples.
What do you think?
