[Sca-cooks] Strange Vintage Bread Recipe (OOP)

While digging through one of the recipe boxes left to me by my Granny
I came across a truly strange recipe. In reading it I thought "Some of
the people on the Cook's List might find this interesting, or they
might find it old Hat" either way - I found it intriguing enough to
pass along. I will transcribe it verbatim.

Salt Rising Bread
(yeast)
At noon peel, wash and slice 1/2 pt. raw potatoes into a quart jar.
Add 2 heaping T. cornmeal, 1 t. salt, 1 t, sugar and a pinch of soda.
Pour over 1/2 c. scalded milk and 1 1/2 c. boiling water. Stir & keep
warm over-night.
(sponge)
In the morning strain out potatoes and add 1/2 c. warm water, 3/4 t.
sugar and 1/2 t. soda & thicken with flour to make a soft sponge.
Again set in warm water & let double amount. If in a hurry, add one
package of yeast here.
(Dough)
Have ready: 6 1/2 c. flour
1/2 c. lard
2 1/4 t. salt
2 T. sugar
About 1 c. warm water
Make dough & knead for 10 min. Shape into loaves about 1 1/2 lbs. in
size, place in greased pans, let rise to double. Bake at 350 for 33 to
35 min.

I am sure that it will be something that is not at all surprising to
those here that are more adept bakers - but I have little to no
experience in that area.
