Real Butter is challenging to manage as a basting liquid at volumes in a
busy pizza joint.  You can try clarified butter as a superior substitution
to liquid margarin of the butter subsitutes.  Horror of horrors, they
actually make a garlic flavored liquid margarine for foodservice use.  No
trans fats, but the liquid margarine has a water content that will make the
crust soggy if used in too high amounts.  In small amounts, you can get that
'buttery' tasing crust edge that Hungry Howie's forced into the marketplace
in the early 80's.
