[Sca-cooks] OOP-OT Squash

Chocolate Zucchini Cake is one of my favorite ways to 'disguise' vegetables
from my children.
Cream 3/4 cup butter with 2 cups sugar, beat in 3 eggs. Stir in 2 cups
grated zucchini, 2 tsp vanilla, 2.5 cups flour, 2.5 tsp baking powder, 1.5
tsp baking soda, 1/2 cup cocoa, 1 tsp salt, 1 tsp cinnamon, 1/2 cup
chocolate chips and 1/2 cup chopped nuts. Bake for 60 to 90 minutes at 350F.
We found a delicous winter squash pie in "The Medieval Kitchen Recipes from
France and Italy", page 156, that we served several years ago at a Royal
Progress. Sweet but not too sweet, very yummy with acorn squash and just a
fraction of the butter it called for.

p.s. Looking forward to a large crop of the green devils sometime next
month...no blossoms yet just lots of leaves. It didn't get warm enough until
June 1 to plant up here(almost 3 weeks earlier than usual)! It's been an
unusual year for weather.
