Canned milk is severely heat treated (canning is a high-temperature 
cooking process). I doubt you will get satisfactory results. Goat 
milk is pretty delicate to begin with and the curd produced even from 
raw goat milk is very fine. I suspect it will be even worse with the 
canned type.
