Damn, I wish I had such problems.
I really like venison done simple. I generally grill it, it's lean so
I brush it with olive oil and season with salt, pepper, maybe a bit
of sage and thyme. I like it just on the medium side of rare.
If it is from a tougher cut, I'd make sausage mixing it with pork
back fat and some pork meat. I'd use sage, thyme, salt, pepper, mace,
garlic and onion in it. Maybe some dried currants or raisins or other
dried fruit in it for a bit of sweet and tart.
