When I was at the Oxford Symposium on Edwardian food a couple of years
ago, one of the lecturers (Brears?) made up several ices and ice creams
from a period (Edwardian) ice cream recipe book. The one I really liked
was the Parmesan ice cream. It was delicious - salty and zesty and
mouth-filling. Not sweet. Wish I'd had more of it.
