The only problem I ever have with vegetarians or vegans, as either a cook or
a fellow diner, is when their convictions are "fundamentalist", and they
want or expect everyone else to adopt their dining "religion". 

So, yes, assuming that there will be sufficient vegetarian or vegan
offerings in a feast if they don't advise you of their preference is one
manifestation of that.  But worse is when they decide that everyone in a
group's conscience must direct them to also be vegetarian or vegan, and no
other offerings are made for those of us who are omnivores or carnivores,
and when the vegetarian/vegan offering(s) is(are) unpalatable. I once
attended a community meal where they actually polled participants for their
dining preference... omnivore, carnivore, vegetarian, ovo-lacto or vegan.
Then when we arrived, they served everyone a vegan eggplant enchilada which
was like eating cardboard.
