Personally....not that great. I just don't
think the vegetable stock made a good 
substitute for chicken stock.
 
It just seemed pasty and a bit harsh. But
if anyone on here actually is a vegetarian
and ate some I'd be happy to hear their
opinion.
 
Instead of chicken stock I used vegetable
stock and roasted then diced portabella
mushrooms for the meat. Pretty much
everything else was the same. I just think
the problem was the veggie stock.
