Okay, does this mean a pig's head with the skin removed, leaving just  
the meat? Or just the skin from a pig's head? Or the meat and skin,  
both removed from the skull?

I'm not sure if this would be a help or not, but if you decide to  
take advantage of this unusual offering, there is this file in the  
FOOD-MEAT section of the Florilegium:
