Change the flavour probably yes - conoisseurs can taste the difference between wines that are 'alive' - allowed to continue fermenting until the process stops naturally - and those that have been sterilised by heat treatment. But it wouldn't cook off the alcohol - you don't need to heat it to anywhere near boiling point, and only very briefly.

I think they're called acetobacteria. If you've been really bad, they come to settle in your brewing equipment.
