Of course, there's always Jean-Anthelme Brillat-Savarin, who wrote in  
1825, at the beginning of one of the earlier non-cookbook pieces of  
specialized food writing, "The Physiology Of Taste", "Tell me what it  
is you eat, and I will tell you who you are."
