"Heide" is the noun for both moorland (female gender) and pagan or heathen 
(male gender), while modernly "heidnisch" is used as an adjective meaning 
pagan, heathern or godless, it may be that here it is relating the recipes 
to "die Heidschnucke," the moors of Northern Germany.
