[Sca-cooks] Fish at feasts

Bouillabaisse   fish soup ... sorry ... should not try to type when I am stressed out.
The idea was to use stuff found within the local area (within 100 miles of home).  The fish I smoked was local catch rainbow trout and macanaw trout.  The rainbow held up better than the mac.  I soaked fillets in salted water and used applewood chipped from the neighbor's tree to smoke with ... smoked it for around 45 min.  using the lowest possible fire.  It was cooked through and likely would have been cooked enough to preserve it but we didnt get the chance to find out.
