document them before what, 1800 or so?? Oh well.

I learned mine from the local Scots Club..yummy with Lumbard mustard,  
or HP sauce from England!!!

Just in case anyone here doesn't know what these folks are talking  
about see this file in the FOOD section of the Florilegium:
Scotch-Eggs-msg   (19K)  3/ 5/05    Fried sausage-wrapped hard-boiled  
eggs.

Even if they aren't period, they still make a good, picnic type lunch  
item.
