I assume you are looking for recipes that predate 1600 CE.
Unfortunately, no cookbooks survive from Scotland during our time
period There are some "traditional" recipes, which may or may not be
that old but at best it is an educated guess.
Also through most of period there were big differences between the
lowland and highland Scots. I assume this is true of food as well as
clothing and other things. So, something to just keep in mind.
