Thank you, everyone, for your suggestions. The Mexican(ish) theme won
the taste-bud election, and I am making some chicken-bean burritos
that are destined for the freezer.
Oh, and I have discovered that rice vinegar makes a passable
substitute for lemon juice in a pseudo-avgolemono soup.
