One other way to get into and see a range of modern or ethnic lamb
is to get into Google Books and search under the terms
tongues lamb recipe.
That turns up 600 plus hits, including of course
Unmentionable Cuisine By Calvin W. Schwabe.
Probably many of us have this volume on our shelves.
It also turns up recipes like:
Broiled Lamb Tongue. — Split 12 boiled lamb tongues in half,
dip them in melted butter, cover with fresh grated bread crumbs,
lay the tongue on a hot broiler, and broil light brown on both sides.
Dress the tongue on a warm dish, spread over 2 ounces maitre
d'hdtel butter, and garnish with fried tomatoes.
Lamb Tongue a la Tortonia. — Prepare 12 lambs' tongues as
in foregoing recipe, serve, in place of maitre d'hdtel butter, with
tomato sauce, and garnish with potatoes tortonia.
