I just got back from Potrero War yesterday afternoon and am catching 
up myself...

It's a parasitic fungus that grows inside the kernels of corn. It 
looks really odd and has a slightly unappealing ash-gray to black 
color, but it is very earthy and quite delicious.

Some of it remains within the kernels and some bursts out. The canned 
product has the infected corn kernels and smaller bits of fungus all 
mixed together. When fresh it is sold on the ear and you shave off 
the kernels to use them.
