I am sure others with better collections of books will chime in on

Redaction as used here is simply a fancy word for interpreting a 
period recipe and converting it into a modern form. We are used to 
having exact measurements and precise step by step instructions in 
our modern recipes but period recipes almost never follow such a 
form. Cooking techniques were different as well as most cooking was 
done on the hearth and different pots and utensils than we are used 
to today would have been utilized for such cooking.
