Roasting or steaming them whole is the best way to cook beets.   Leave a piece of the stem and don't cut into the beet until it is cooked.  Trader Joe had some cooked beets in a little tray that weren't too bad either.  Or look for golden beets. 

Beets have been one of my favorite veggies since I was a kid (I know, I was a weird kid and still am).  Unfortunately my husband is severely allergic to beets, to the point that when I test-cooked them for my German feast, he had to leave the house.
