Try and see if you can find spring lamb or baby lamb (also might be called 
milk lamb or hothouse lamb) which is younger and more delicate and does 
not have that gamy mutton taste that older lamb has acquired.

The lamb I had in Yorkshire was spring lamb, and it was exquisite. Also it 
was really really good.
