Doing a Google search for something like "basic butchering classes"
turns up things like this hit from CraigsList:

Unfortunately, while this happens to be pretty local for me (I gather
it's in one of the stalls in the Essex Street Market in Manhattan,
which is basically an ancient, cavernous railroad depot which was
converted into an indoor ethnic market decades ago), I'm not sure
where you are located. But if you're lucky, there may be a local
equivalent.
There are also some good books specifically on meat cutting and
cookery on Amazon and elsewhere.
