Several months ago Vitha (Lady Hrosvitha von Celle) posted a message  
here about the entry and documentation she was doing on numerous  
dairy products for an A&S Challenge.

She was nice enough to let me make it available in the Florilegium  
and I finally got it online this last weekend.  It is now available  
in the FOOD section of the Florilegium as:

Among lots of info on dairying, it includes info and recipes on:
1) Semi-hard rennet cheese for long storage & sale (Gouda)
2) Pressed Whey cheese (Zeigerkase)
3) Butter (salted)
4) Buttermilk (from butter)
5) Buttermilk cheese (sweetened with honey & ginger)
6) A soft cheese (acid) for daily consumption (flavored with thyme &  
salt)
7) A quick "farmer's cheese" for baking & cooking
8) Whey cheese (ricotta) from rennet cheeses
9) Whey for drinking and cooking

So those interested in cheese and dairy products might want to take a  
look.

I did have a bit of a problem with some of the formatting, but I  
think I've got most of this fixed, except for some odd blank spaces  
within some lines, I think caused by Word's handling of tables. But  
if you see any problems, please let me know.
