OK.  The question is backwards.

It's not what to substitute for tomatoes.  It's when tomatoes were introduced into the Old World, were *they* subbed into existing recipes or were new dishes created for them?

When I run the Old World/New World game, cooks playing the game and I get into the discussion of which food was the easiest sell.  Answer:  the one that closely resembled what they already had.  IE, turkeys for bustards, pumpkins for pompions.
