Have you taken a look at A Drizzle of Honey: The Life and Recipes of
Spain's Secret Jews ?
It's "a cookbook of medieval recipes that is, more significantly, a
document of religious persecution during the Spanish Inquisition."
It discusses what was eaten before the forced conversions. The recipes
are not as authentic as they could be, but
it would be a place to start.
