In Rumpolt, beet is "roten Ruben".  As I said in my previous message, this was "Zucker Wurtzel", which I think means skirret.

There are also references to "Cicuri Wurtzel" chicory root, "Petersilgen Wurtzel" parsley root, "Wegwart Wurtzel" also chicory root (perhaps another sort), "Boraga Wurtzel" borage root, and "Weiß Ruben" turnip.
