Considering I usually only have canned or dried/rehydrated mushrooms around
to deal with for this, slice/dice would probably be fine, and leave the
various mushrooms semi-identifiable. I should note that if doing this with
dried and rehydrated mushrooms, a restrained amount of them is a good idea.
My lord husband and I did this once with a LOT of dried mushrooms, and the
sauce was VERY strong, almost funky...
