Cheaper book would be this one: Baking with Agave Nectar
 By Ania Catalano, Lara Hata

Agave mead is mentioned in Doña Tomás
By Thomas Schnetz, Dona Savitsky, Mike Wille, Ed Anderson, Richard
(FRW) Rodriguez

There's a full view of this one: Notes on Agave and Furcraea in India
By James Ramsay Drummond, David Prain
http://books.google.com/books?id=O0caAAAAYAAJ&pg=RA1-PA289&dq=agave+mead&lr=&num=50&as_brr=0

Apparently it's a vegan thing and used instead of honey.

Does anyone know the history of agave syrup also called agave nectar?
Has anyone fermented with it, like honey, to produce an agave "mead" or
experimented with the light, medium, and dark varieties sold?

Daniel
