I think a class I would like to attend is how to apply the "humor theory" to
the dishes. It is such a big part of the mindset of the cuisine, even post
period, yet there are classes on theory, but not the practical application
of the theory.

I know I could figure it out if I applied myself to the different lists, and
paid more attention to the various verbiages relating to it. But I don't
instinctively apply humoral theory to either combinations of recipes to
balance a meal, or combinations of foodstuffs to create a new dish in the
period style.

I always loved the scene in Taming of the Shrew when they have the whole
sequence about the various meats being too choleric...

I would be curious if the ayurvedic theory has any correlation. I have seen
basic descriptions of ayurveda, but never tired to compare the two. It would
be interesting to see if the various foodstuffs were regarded in the same
manner...
