[Sca-cooks] The infamous "Top Chef" episode

I finally got to sit down and watch the episode with Tom saying

the infamous phrase, "They needed tons of spices because the

food was rancid." Sigh...

 

Anyway, the challenge was for the contestants to go to various

casinos and do an appetizer for 150 based on the theme or design of them.

One contestant, Jennifer, got Excaliber. Her entry was a rather

uninspired "Sword in the Stone" with a plastic sword in a very

tough chunk of sirloin and topped with a red wine reduction.

 

My challenge is to see what you would have presented. 

The winning dish was from New York, New York of a fancified

boneless Buffalo Chicken wing. 


My idea for the Excaliber entry would be to do an Icelandic

Chicken with a boneless chicken thigh wrapped in pancetta

with sage and then wrapped in pastry then baked. Probably

served with a green sauce and the plastic sword inserted

in the top. Again using her "Sword in the Stone" theme but

with a period dish (modernized a bit) and adding the sword

to lend the rather cheesy element that is the casino.

 

What would you have made?
