If you read French, there are a number of facsimiles and
histories available. Also illustrated volumes on techniques.
You can browse titles through Amazon France.
You might search under Gastronomie
Histoire de la gastronomie
You should cross check titles to see if the books have
been translated or are cheaper here in the US. With the Euro so
high again, books are often cheaper here.
