Yeah, I know, but I thought it being "Irish" would appeal to you.

I usually use the pickle recipes from WILD FERMENTATION, which I have 
bored people with on this board already.  <www.wildfermentation.com>  
Very easy, the secret ingredient is TIME.  So if the lunch is coming up 
soon, it's time to get that started asap.
