Have you taken a look at Anthony Bourdain's episode on Chicago?
He covered the food scene fairly well.
Roadfood has a section on Chicago. 500 Places to Eat Before It's Too
late mentions several.
Hamburger America is also helpful.
Not local but I did grow up downstate...
