I'm not sure if you are referring to the idea of period food in the 
food court or of people making it for themselves. Period food isn't 
more expensive than out of period food, just different. A food 
merchant in the food court who made period food should be able to 
provide it at about the same price people now pay for out of period 
food. Similarly for the cost of cooking it yourself in camp.

And people who rely on others to feed them could do so as well if the 
others were producing period food.
