I seem to recall Gordon Ramsay saying that his traditional test is a proper batch of scrambled eggs (creamy style)...

I think the only formal job interview "test" I ever received was to make a quick vinaigrette; but as simple as this is, you can learn a lot about how someone works and the training they've received by watching their hands as they set up the bowl and whisk stuff.

I had to get my Evil Spawn up at an ungodly hour and shove him onto a bus this morning to go back to school, and made, even before thinking about caffeine sources, an egg and Joisey Pork Roll, a.k.a. Taylor Ham sandwich (figuring he could either eat it or take it with him). I was surprised at the number of questions he asked about the proper frying of an egg destined for a not-too-messy sandwich. I don't think this child is destined for the great kitchens of the world, but it was nice to see him take an interest. And then there's the fact that the Tao of Breakfast will serve him in good stead in a number of future real-life situations.
