I'm fine with experiments with food, or i wouldn't be playing with
strange old cookbooks ;-)
What we ate at Sanford in Milwaukee were small servings on carefully
selected plates and "garnishes" were an integral part of the dish
(not something added to fill up the plate or dress up otherwise dull
food). No foams, although i've been curious to eat a meal that
incorporates them so i can have the actual experience
I've read that Grant Achatz, of Alinea in Chicago, has used food
stuffs as inks and had a computer printer specially designed to
utilize them to print into edible paper. Now that is a subtlety, very
subtle.
