[Sca-cooks] elderberries

they are modern elderberries, I've never found a source for medieval ones, but if you have a source please let me know.  I've dried a bunch for future fritters but no I have bumper crop of the berries coming in.  I also have a huge crop of currents.  So, do I freeze the currants and use them 'fresh' for my tarts or should I be drying them?

Period or non? You can use them to make a dye--depending on what prep the fiber has you either get a very fugitive pink or a similarly fugitive blueish-greenish-grey. 
 
We used to make pancake syrup out of them, and fritters with the flowers.
