[Sca-cooks] Non-dairy white sauce gluten free

Vegan Alfredo Sauce

1 Tbl Olive Oil
1 smalln white onion
3 garlic cloves
2 tblspns dry white wine
1/3 cup unsalted raw cashews
½ cup silken tofu, drained
2 tblspns nutritional yeast
1 ½ cups plain unsweetened soy milk
½ teaspn salt
2 tblspns minced fresh parsley (for garnish)

In a medium saucepan, heat oil over medium heat.  Add onion cover and cook
until soft (about 5 minutes), add garlic for the last minute or so of that.
Stir in wine and set aside (off heat).

In a high speed blender grind cashews into powder.  Add onion/garlic
mixture, tofu, and yeast and process until smooth.  Add soy milk and salt
and blend again until smooth.  Transfer back to saucepan and heat over low
heat stirring occasionally.  Keep warm until served.  I like to garnish with
minced parsley.

Also makes a great parma rosa by adding marinara and some red pepper flakes
to the second blending step.
