How many servings are you making? Theme of feast?
If it's one or two people, it might be easier to just make a dish for  
them
and not trying to adapt a recipe by leaving everything objectionable  
out.
You might check http://recipes.medievalcookery.com/ and see if some of
recipes under V might work for you. These are vegetarian versions, not  
necessarily vegan.
