You're reading that wrong.  The term "fries" is Oklahoma usage and I did not 
make any claim to exclusivity.  Lamb fries and Choc beer is good eats in the 
Nations.

Mountain oysters or Rocky Mountain oysters I've encountered across most of 
the western states.
