Hello, I just joined this list and wanted to say howdy. 
I am Juana Isabella de Montoya y Ramirez and I live in the West. 
My area of particular interest is late period Spanish food, but I'm interested in all aspects of period cooking. 
Lately I've been making aged cheeses. The two most recent ones are awaiting their fate at the Cooks' Playdate at the West An Tir war in July. 
I will be cooking a late 14th/early 15th c Catalan feast in November where the service is based on period sources and the dining equipment is all as close to period as possible. The group doing this did 14th c English feast a couple of years ago, also with service appropriate to the time and place.
