The ingredients pretty much stay the same, but varying the ingredients  
can change the flavor quite a bit. Sugar vs. honey. Which type of mint  
used. Definitely which kind of vinegar is used.

I think it was after Jadwiga's Pennsic mustard making class a couple  
of years ago, a bunch of us went to a nearby camp which had a variety  
of Sekanjabins and some people brought over more. There was quite a  
range of tastes.

I keep hearing that making it with a sugar substitute, while giving up  
its syrup long keeping capability, does allow those who can't have a  
sugar syrup based drink a chance to partake.
