[Sca-cooks] Smokin'!

My dearly beloved gave me an early Christmas gift in the form of a top of the line
Bradley, electric, drop feed, digital smoker!
So now my charcuterie juices are flowing again and I've already ordered bacon cure
and sausage supplies from sausagemaker.com. 
I'm currently mellowing a batch of Digby's hippocras spiced mustard and now 12th night
favorites may recieve a basket of mustard, bacon and sausages. 
I'm trying to find a good sausage recipe to make to bring to Gulf Wars. Something that
can easily be eaten in hand, probably with lamb casings or in non-edible peel away casings.
I just can't seem to find a good summer sausage type recipe.
So, if you have a Rolls Royce smoker, what would you be smoking?
